There was a powerful part in this interview that came through when she stated that she felt like from the beginning she felt very expected to use her talents to live up to certain expectations other people placed on her because of what she could do and how well she could do it. It's a very difficult burden to bear and a difficult one to free yourself from. In a better world, people should be able to apply their gifts and talents in the ways that inspire them personally, but in our imperfect world it sometimes feels hard to do so without feeling like you are disappointing others or letting them down. I think she was right about how the food industry needs to be more transparent and focused on the public good; I disagree with the idea that applying chemistry to food is inherently bad but it's undeniable that the way that large companies (especially sugar) have used their power has been an abuse of trust that has harmed millions of people and they need to be held accountable.
